Recipe for 4 people:

  • 1 escarole
  • 2 medium potatoes
  • 100 g bacon
  • Mustard
  • high quality extra virgin olive oil
  • White vinegar
  • salt and pepper


Preparation:

  1. Wash and Cut the escarole into banners and leave for 30 min in water
  2. Brown the bacon in a pan
  3. Place the salad, bacon and cooked and mashed potatoes in a large bowl
  4. Season the salad with oil, vinegar, mustard, salt and pepper
