Recipe for 4 people:

  • 4 sausages
  • 200 g barley
  • 2 carrots
  • 100 g cabbage
  • 2 black cabbage leaves
  • Parsley
  • 2 lt. beef broth
  • Salt and Pepper To Taste
  • 100 grated provolone

Preparation:

  1. Prepare the barley following the instructions of the package in water or already in the broth
  2. Cook the diced vegetables in the broth along with the barley until al dente
  3. add the sautéed sausages and cook another 5 minutes
  4. Add half of the cheese at the end of cooking
  5. adjust with salt and pepper to taste
  6. prepare the dish with the hot minestrone and serve with the rest of the provolone which will melt on the plate
