Recipe for 4 people:
- 4 sausages
- 200 g barley
- 2 carrots
- 100 g cabbage
- 2 black cabbage leaves
- Parsley
- 2 lt. beef broth
- Salt and Pepper To Taste
- 100 grated provolone
Preparation:
- Prepare the barley following the instructions of the package in water or already in the broth
- Cook the diced vegetables in the broth along with the barley until al dente
- add the sautéed sausages and cook another 5 minutes
- Add half of the cheese at the end of cooking
- adjust with salt and pepper to taste
- prepare the dish with the hot minestrone and serve with the rest of the provolone which will melt on the plate
